How To Make Persian Kebab-e Torsh

1kg diced lamb backstrap
1 cup finely ground walnuts
half sliced red onion
1 cup pomegranate juice
1 cup chopped parsley
1 tbsp salt
1/4 tsp black pepper
2 crushed garlic cloves
2-3 tbsp vegetable oil
